Monday: We picked up Thai food from Thai Bamboo after getting home tonight. YUM, curry!
Tuesday: Amy's Mac-and-Cheese with steamed veggies and barbecue-marinated tofu
Wednesday: Sweet Potato Chili in the crock-pot
Thursday: Falafel wraps or salads
Friday: Curried Quinoa Salad and some steamed veggies
Saturday: Leftovers

The sweet potato chili definitely looks like something I'll try! I have a goal of incorporating more vegetarian meals into our diet, and I look forward to trying some of the recipes you've linked to. Thanks!
I love falafel but have never tried to make it yet!
